We are pleased to inform you that we have started the winter menu and would like to present some plates of the tasting menu.
The first starter is foie-gras mi cuit (cocked very slowly at law temperature) with sweet and sour apple sauce. Please enjoy its rich flavor and smooth texture. The fish is crispy skin sautéed Nodoguro, which is Japanese seasonal white fish, served with safran sauce and Nanohana (tenderstem broccoli). For your main course, you can choose between sautéed Pluma of Iberian pork, which is our specialty, and tenderly roasted Ezo (Hokkaido) Dear.The first dessert that represents the pearl is so fascinating and artistic.
